1. Wine Style and Technical Plans

Define the style for each wine target with a detailed technical development plan.

Review or establish chemistry specifications and tolerances for all winemaking phases from grapes to final product.

Establish inventory control and material resource planning practices. 

 

2. Vintage Planning and Harvest Management

  • Grape intake target plan calculation, based on demand forecast, bulk inventory, recipes and standard age.

  • Additive, ingredient and oak requirement estimates based on grape intake and technical plans.

  • Review existing or recommend a harvest equipment preventive maintenance plan.

  • Vineyard management advice to maximize grape quality (leaf removal, crop thinning, netting etc.).

  • Grape intake scheduling, maturity and quality control. 

  • Vinification operations with methods, crush crew and equipment usage decisions.

  • Icewine, Late Harvest and Skin Fermented White wines VQA registration.

  • Ongoing QA data reviews.

  • Vintage classification tasting.

  • Wine treatment, ageing, additions, clarification and blending decisions.

  • Plan and provide directions for cellar operations.

  • Establish QA programs and ongoing QA data reviews.

  • Final blend adjustments for bottling.

  • Submission for VQA approval.

 

4. Assemblage

Assemblage is the art of why, when, and how of the wine blending. When done right, can bring the "wow" factor to your wine. 

  • Blend optimization through ageing and final blend preparation for bottling.

  • Winemaker's notes for PR materials including romance description for labels

  • Establish a Bottling Approval process
